Aurora Isles SMP is a new Minecraft survival server that uses its own custom modpack. The mods were picked on purpose so they all add something cool to the server and it does not feel bloated. Some of the big ones are Isle of Berk Archipelago Additions and Starworm equestrian. The server also runs performance mods so more people can play without lag.
The world uses a special seed to make everything feel more immersive. There are frequent events with different themes and a lot of the server is focused on roleplay. People on here like to do How To Train Your Dragon style roleplays and make lore for their characters and their builds. You do not have to roleplay if you do not want to but you are encouraged to join in.

Eden Block is a survival server that wants to last forever. The world is not supposed to reset so players can build a long term place that keeps its history.
The server mixes a few different styles. There is almost no admin intervention and what players do really matters. The goal is a player run world where groups and nations can grow over time.
You can use stone and other blocks to reinforce your builds. This makes griefing super hard because each reinforced block has to be broken many times. There are also snitch blocks that record what people do around them so you can track what happens to your stuff.
Mining and farming are different here. Ores can appear while you mine and biomes have different ore rates. Crops have different growth speeds in different biomes and some crops will not grow in some places at all. Crops take a while to grow even while chunks are unloaded and they are used to make XP in factories.
There is a plugin called Itemexchange that lets the economy grow naturally by the players. Shops are already set up and a central trade hub is being built by members of a few nations.
The server is pretty new but the core community has been together for almost ten years. They usually have around 15 to 25 players during peak time and they seem to really care about making a long term world.

This server is built around a project called Pyrium which is a server side meta loader. It is made so people can mod the server using Python style code but it still runs fast like normal Java stuff.
From what I see Pyrium does not just run slow Python. It compiles the scripts ahead of time into its own bytecode and then a virtual machine inside the JVM runs it. That way the server gets clean Python like syntax but it is still focused on performance and safety.
Each mod runs in its own virtual machine so if a script goes crazy with loops or memory it can be stopped without crashing the whole server. The VM can watch the instruction count and just halt a bad mod which keeps the main server stable.
There is also a system that builds the resource pack for you. It looks through the mod folders for asset files adds namespacing automatically and then merges everything into one zip pack for players so you do not need to mash zips by hand.
Server versions and loaders are managed through a json file. In that file you can say if the base loader is paper or forge or fabric or vanilla and if it should auto update and how the resource pack is handled. Pyrium then pulls the right files and manages it for the server owner.
