I found this server called Anarchy Network and it is a semi anarchy survival world that tries to feel really close to vanilla. It launched in October 2024 and it runs all the time.
You can join with Java versions from 1.7.2 up to 1.21.10 and they say 1.21.10 is best so stuff does not bug out. The world border is huge and goes out to two million blocks so there is a ton of space to run and hide.
The playstyle is very loose. There are no map resets and no teleport commands so if you go far you really travel. There is no pay to win at all and griefing and PvP are fully allowed so you have to be careful who you trust. The only non vanilla thing you can use is a spawn command so people far away do not feel trapped.
They also allow using the nether roof and they removed phantoms so nights are a little less annoying and only half the people in the server have to sleep to skip the night.
Even though it is semi anarchy there are still some rules. You cannot use exploits or dupes. You cannot build lag machines or spam chat. Harassment and racial slurs are not allowed either.
Overall it feels like a pure survival server with almost no limits where the world never resets and your actions actually stay forever.

The server uses proximity voice chat so talking to other players feels natural when you walk near them. There is also a shopping district that is built above an open ancient city at spawn so the center of the world feels pretty cool.

MooshySMP is a survival server that tries to give builders raiders and explorers all something to do. When I joined it felt like a fresh survival world but with some cool twists.
There is a protected building zone where you can make your base without worrying about grief. That area never wipes and raiding and pvp are turned off there so it is good if you just want to build in peace.
Outside that you get a giant custom generated world with a huge radius so there is a lot to explore. There are custom mechanics duels jobs skills and other stuff that makes the game feel more than regular vanilla.
The server has events like a buzz bee event and there is an AXHoes plugin plus bundles for builders and explorers and even map art and baby mobs so there is random fun stuff to mess with.
