I found this server called Anarchy Network and it is a semi anarchy world that feels really close to vanilla. It started on October 11th 2024 and it runs all the time so you can join whenever.
The server lets you play pure survival with almost no rules. Griefing is allowed and pvp is allowed so you always have to watch your back. There are no map resets so whatever you build can stay there as long as the world exists.
You can join on Java from version 1.7.2 up to 1.21.10 but they say that 1.21.10 is the best so things do not break. The world border is huge at two million blocks so there is a lot of land to explore and hide in.
There are almost no commands. There is no teleporting and no pay to win shop. The only non vanilla thing you can do is use spawn so people that went really far out do not get stuck alone forever. They also let you use the nether roof and they removed phantoms and only half the players need to sleep to skip night.
The rules are pretty simple. You cannot use exploits or dupes. You cannot make lag machines or spam and you are not allowed to harass people or use racial slurs in chat. Other than that the server really just lets players do what they want.

This is an anarchy server that has been running for about a year and it is called MinecraftOffline. The world is eternal so they never reset it and everything that players build or destroy stays.

Chilltown is a survival SMP that has been running since 2019 and it feels really calm and steady. The world has grown slowly over time with towns farms and different player projects so it feels like a place people actually live in.

This server is called Helianthus Solstice and it is an SMP about three big Houses that control everything important.
When you join you must pick a House. Adamant is the hardcore industrial mining and business side. Demeter is the nature and farming group that feels kind of communistic. Theurgy is the magic and research group that acts like greedy sorcerers. Your House actually matters since they control different resources everyone needs.
The world gets harder as players progress. At the start it is normal difficulty. When the first player reaches the Nether the whole world becomes hard. When someone gets to the End the world becomes extreme. The wild part is that the actions of your House help push these stages so you kind of work together early and maybe fight later.
There are also three gods named Scythia Leonidas and Bremen. Each god will run one big event this season where Houses compete and winners get divine favor. That makes their House stronger. Players can also do deeds for the gods to get gifts.
They tell you to read the House constitutions and lore before joining because your choice really matters. It feels like a server where politics and alliances and maybe future wars are a big deal.

Sparked is a long term survival world that feels like you just joined a friends server. It is very simple and close to pure vanilla and it is all about a chill social SMP.
The server is trust based. There are no big text menus and no warps and no land claims and only a few quality of life things. You kind of just spawn in and start playing and meeting people like a casual friend world.
The admins stay active and they keep the server running smooth. They use some tools in the background to protect builds and they are open about server costs specs and bans. The whole place is meant for a mature adult style community.
