I found this server called Althaia MC and it feels really chill. It is a vanilla style survival world but with some RPG elements to make it more interesting and not boring.
The server is made for all kinds of players. You can be a beginner or someone who already knows everything about Minecraft. You can just relax and build or you can enjoy some PvP if that is your thing.

PeaMC is a semi vanilla SMP that tries to feel like classic Minecraft survival. There are no teleports and there are no land claims so you travel the world the normal way and build where you want.
It is whitelisted so people have to apply which helps keep trolls out. The owner and mods are active in game and in Discord and the community is meant to be chill.
The server supports crossplay for Java and Bedrock from 1.7x to 1.21.11. You can form teams and invite friends. PvP is allowed but griefing and stealing from bases is not allowed and spawn killing is not allowed.
There is newbie protection where PvP is off for your first hour unless you disable it. Some destructive PvP stuff is banned like TNT beds respawn anchors end crystals and minecart PvP and maces are banned too. I found a server group called Toxic Network and it is running two modpacks right now. One is Prominence II and the other is FTB StoneBlock 4.
The servers are very new and they want to open more servers later. They host from the EU but they say US players should still feel almost no lag difference.
