This server is called All Outta Blocks and it is a chill 18 plus Java SMP. It feels like a big friend group where people hang out a lot and not just in Minecraft. There are usually a few to around twenty players on and the whole community is close to one hundred people.
The world is set up kind of like Hermitcraft. There is a diamond based economy and a shopping district where players make shops. There are also public builds and shared projects so you do not have to play alone if you do not want to.
The server is mostly vanilla but not fully. It has proximity chat so you can talk when you get close to someone in game. There are homes and player warps and some cosmetic and quality of life plugins. New plugins get added from community requests and polls so the players help decide how the server grows.
The goal is to keep the normal vanilla feeling while still adding cool stuff when the community wants it. It is a whitelisted server and only for adults so the vibe is more relaxed. If you like Hermitcraft style survival and a social community this server fits that really well.

I found Anarchy Network and it is a semi anarchy survival server that tries to feel like real Vanilla Minecraft. It has very few changes and the point is to let players play rough with griefing and PvP allowed.
The server runs all the time and it supports Java versions from 1.7.2 up to 1.21.11. It says 1.21.10 is recommended so stuff works smoother. The world border is huge at 2 million blocks.
There are no map resets and there is no pay to win. There is also no teleporting but spawn is allowed so people far away can still get back to civilization. Nether roof access is allowed, phantoms are removed, and it takes only half the players to skip the night.

It has quality of life changes like death coordinates in chat and item and ender links in chat. Phantoms are optional so you can turn them on or off for yourself.
The server also focuses on performance with dynamic view distance based on load and faster leaf decay when you chop trees. Mobs scale with how many players are on and there are per player mob caps so other people do not ruin your farms.
Travel is easier with sethome and spawn. Warps can be unlocked through voting. Building gets extra tools like armor stand editing invisible item frames custom player heads map signing so maps cannot be copied and item displays on signs for shops or museums.

ArcticMC SMP is a new survival server that started just a couple days ago. It mixes Towny and factions so you can build a town then claim land and make alliances or go for your own territory.
PVP matters here but it is not meant to be messy. They use an honor system for fights and it is explained in their rules.
It also has McMMO skills so you level up as you play and unlock abilities like you are in an MMO. There are custom items too and they even have furniture. The furniture is entity based so they plan to set a per chunk limit to help with lag.
