So I found this server called ChillGrindSMP and it is just a simple Java survival world that feels really relaxed.
It runs on version 1.20.10 and it uses ViaVersion so people on a bunch of different Java versions can still join together. That makes it easier if you do not like updating all the time.
The main thing here is no griefing. People are not allowed to wreck your builds or steal your stuff so you can actually spend time building and grinding without worrying about it getting ruined.
There is a gravestone plugin too. When you die your items go into a grave so you do not just lose everything. It makes the server feel less stressful because one mistake does not destroy your whole progress.
They also have a simple player economy. It is not super complex and it is meant to be easy for everyone to use. It fits the chill style of the server.
There is no pay to win stuff at all. No crates and no weird monetization tricks. Everyone plays on the same level which is nice if you are tired of servers that sell power.
The community is small and pretty chill and it feels welcoming if you just want a place to relax grind and build with other players.

This is a Minecraft server running a Valentines themed Build Battle event. The whole point is to hop on and make cool builds around the Valentines vibe and try to impress everyone.
From what I can tell it is focused on creative style building and short events instead of super long grindy gameplay. It feels like the kind of place where you just join in build something fun and hang out with other players for the event.
They are on version 1.21.8 so you will need that to join. If you like building around themes and trying to win little build battles this server looks pretty fun.

This server is trying to bring back that classic HCF and KitMap feeling but with some upgrades that actually make sense. It is a beta map so they really want players to help shape how the server plays.
The main thing here is KitMap. Everyone jumps into fights really fast and the gear is set to Protection II and Sharpness II so it is not super overpowered. There are ability items too but they are balanced so ranked players or people with keys do not get crazy unfair advantages.
The owners want an old school style KitMap but with modern changes so it feels smooth. Pearl mechanics are custom. You cannot pearl through string but you can pearl through fence gates. They say all of this might change because it is beta and they are actually listening to player feedback.
They are also looking for staff. They want people who are dedicated and can help grow the network. Most of the focus is on community feedback bug reports issues and suggestions so players who like testing and helping build a server from the ground up will probably like it here.

Sunset Retreat SMP is a seasonal vanilla plus server for players who are 18 or older. It is based in the EU and feels really calm and relaxed. The whole idea is to escape real life stress and just chill in Minecraft with other adults.
The community is whitelisted and they want a mature group of people. Players there seem welcoming and inclusive and it sounds like a nice place to meet new friends. The owners are active and actually play on the server which makes the server feel more alive.
