ArcticMC SMP is a new survival server that started just a couple days ago. It mixes Towny and factions so you can build a town then claim land and make alliances or go for your own territory.
PVP matters here but it is not meant to be messy. They use an honor system for fights and it is explained in their rules.
It also has McMMO skills so you level up as you play and unlock abilities like you are in an MMO. There are custom items too and they even have furniture. The furniture is entity based so they plan to set a per chunk limit to help with lag.
The world uses Tectonic generation so the terrain looks big and realistic with mountains and valleys. The community is meant to be calm friendly and atmospheric so you can grind build explore or just vibe.GG.MINEWIND.NET New Server IPMCVerse Permanent No-Grief No-Reset SMP
MCVerse is a no grief server made for long term building and taking breaks without coming back to a mess. It is a classic survival grind with a no reset plan and a big 10 year goal.
The gameplay stays close to vanilla with no custom items enchants or skills. There are player markets if you want to skip the grind or you can do everything the slow way.
Chat is kept clean with low tolerance for swearing and public chat is meant for Minecraft and gaming talk. It feels like playing single player but with neighbors if you want to trade and team up.
The main survival world is permanent and it has claims a map markets clans and stuff like fishing contests. There is also a hardcore vanilla server with no grief and extra biome scaling plus an inspect tool. If you want simple vanilla there is a smaller world option and there are creative plots for testing and building ideas.

CaveMC Season 2 is a semi anarchy survival server with an enhanced vanilla feel. The big twist is the overworld is fully underground. There is no surface at all so you live in caves forever.
The world is custom generated by real Minecraft developers. It is packed with underground biomes plus resources plus structures to find. Survival sounds rough and you have to be smart to last.
A huge new part is the Wasteland Dimension opening on November 8th. It adds brand new gear to fight over and giant mega structures with secrets inside. It also brings its own currency so players can trade and build a new economy.

I found a survival server that feels like semi anarchy and it does not reset. People can PvP and raid so you have to build smart if you want your stuff to last.
There are no claims and no kits and no pay to win. Clients are allowed but movement stays vanilla so it still feels fair.
You can use /home and /tpa to get around. There are voting cosmetics too. It supports Java and Bedrock and it is on 1.21.11.

The server has a player run economy so people trade and try to get rich and control the market. There are basically no traditional rules so it turns into chaos with lots of strategy and survival of the fittest.
