Snowdrop SMP is a modded Java server on NeoForge 1.21.1 and it is more of a mess around kind of place. The modpack feels like a kitchen sink so it does not really stick to one theme and that is the whole vibe.
They are open to suggestions for basically any kind of mods so the server can keep changing with the community. You have to apply to join and it is for players who are 16+ and they say applications get accepted pretty fast.
The pack has lots of Lets Do mods plus Starcatcher for reworked fishing. There is also a bunch of building and decor stuff like Chipped and Handcrafted and some Macaws style mods. For adventure there is L Enders Cataclysm and there is Farmers Delight plus voice chat and magic mods.
