BauKlotzHeim is a relaxed Minecraft survival server that runs on Java 1.21.11 and also allows Bedrock crossplay. It is meant for players who like normal survival building together and going on real adventures as a team.

PeanutSMP is a chill survival server where people just play Minecraft how they like. The whole vibe is really relaxed and not sweaty at all.

I found this modded server called Iperios and it is all about making nations. You can start your own nation and choose how it is run. You make your own government and your own laws and your own ranks. If that sounds like too much work you can just join someone else and help their nation grow.
The server runs the Allthemods10 modpack on version 5.3.1 so you need that to play. You have to join the server discord first and ask to get whitelisted. Then you read the new player info to get the IP and some basic tips.
When you first join a staff member helps you. They guide you so you know what to do and they give you a beginner kit. After that you are free to start building and join or create a nation.
The rules are not fully listed but it feels organized and pretty friendly because you talk to staff first and you have to get whitelisted. It seems like a good place if you like modded Minecraft with more politics and nations instead of just solo survival.

This server is hosting a big civilization style event with 100 players.
To join you have to submit an application. They are looking for people who really want to be part of the event not just randoms who leave right away.

So I found this Minecraft server called Delfinator and it is almost like an anarchy world but in Spanish.
The server is semi vanilla and there are almost no rules. The only rule that really matters is that you cannot use hacks like wallhack aimbot or godmode. Besides that you can do pretty much anything.
You can kill other players you can steal their stuff you can raid bases or just build your own house and chill if you want. People are free to camp run in teams big or small or live totally alone.
The community already has around 80 players so there are always people to fight or to team with. Chat can be pretty wild and people swear a lot so if you have soft humor this is not for you.
There is no age limit and no country limit. The only thing you really need is to speak Spanish. If you want a simple Minecraft survival world with lots of freedom and chaos this server fits that vibe.
